Pork in Sweet-Sour Sauce
Ingredients:
1 1/2 lbs. lean boneless pork cut in 1/2" cubes
2 Tbs. cooking oil
1/4 c. chopped onion
1 15 oz. can pineapple chunks
1/4 c. brown sugar
2 Tbs. cornstarch
1/4 tsp. ground ginger
1/4 c. vinegar
3 Tbs. soy sauce
1 medium green pepper, chopped
Hot cooked rice
1 1/2 lbs. lean boneless pork cut in 1/2" cubes
2 Tbs. cooking oil
1/4 c. chopped onion
1 15 oz. can pineapple chunks
1/4 c. brown sugar
2 Tbs. cornstarch
1/4 tsp. ground ginger
1/4 c. vinegar
3 Tbs. soy sauce
1 medium green pepper, chopped
Hot cooked rice
Directions:
In large skillet brown the pork, half at a time, in hot oil. Return all meat to skillet. Add onion and 1/4 c. water. Cover and simmer for 30-35 minutes.
Drain pineapple, reserving the juice. Combine brown sugar, cornstarch, ginger, and 1/4 tsp. salt. Blend in reserved pineapple juice, vinegar, and soy sauce. Add to pork mixture along with green pepper; cook and stir till thickened and bubbly. Stir in pineapple; heat through. Serve over rice.
