Potato Balls
Ingredients:
3 c. leftover mashed potatoes
1/4 c. diced celery
2 Tbs. butter
1/2 tsp. salt
1/8 tsp. pepper
1 c. fine cracker crumbs

Directions:
Melt butter in a saucepan and add minced celery. Fry celery until soft; then add to mashed potatoes. Add seasoning and shape into round balls. Roll in cracker crumbs. Fry in deep fat until a golden brown. Makes 18 small balls.
