Zucchini Balls in Tomato Sauce
Ingredients:
4 zucchini
1/2 c. chicken broth
1/2 c. tomato juice
1 Tbs. cornstarch
2 Tbs. cold water
Salt and pepper
4 zucchini

Directions:
With a melon baller, shape zucchini into small balls. In a saucepan, bring to a boil chicken broth and tomato juice. Add zucchini. Cook 4 minutes.
Dilute cornstarch in cold water. Fold into mixture. Continue cooking until sauce thickens. Serve.
