Potato Casserole

Directions:
Boil 6 to 8 peeled potatoes in salt water until tender. Saute 1 chopped onion in butter until soft. Drain potatoes and mash, using 3/4 c. milk. add sauteed onion, 2 slices cubed white bread, 1/4 c. butter, 1 egg and 2 Tbs. parsley. Season to taste with salt and pepper. Add another cup of milk and whip mixture thoroughly. Place in buttered casserole and bake at 350 for 1 hour.
