Puffed Potato Patties
Ingredients:
1/2 c. flour
1 tsp. baking powder
1 1/2 tsp. salt
1 1/2 c. mashed potatoes
2 Tbs. minced onion
2 eggs, slightly beaten
1/4 c. shortening
1/2 c. flour

Directions:
Blend the first 4 ingredients in a bowl. Add mashed potatoes, minced onion and eggs; mix well. Heat shortening in a large skillet. Drop by tablespoonfuls into hot fat and fry, turning to brown evenly.
