Rhubarb Custard Pie

Ingredients:

3 1/2 c. chopped rhubarb
1 1/2 c. sugar
3 eggs, lightly beaten
1/4 c. half and half or milk
1 Tbs. flour
1/8 tsp. salt
1 9 " unbaked pie shell (sprinkle 1 Tbs. flour over bottom of crust)

Directions:

Combine first 6 ingredients. Pour into crust. Bake at 375 for 1/2 hour. Reduce heat to 350 for 1/2 hour until set.

Makes 6 -8 Servings
