Rice Pudding
Ingredients:
3 slightly beaten eggs
2 c. milk
1 1/2 c. cooked rice
1/2 c. water
1/2 c. raisins
1 tsp. vanilla
Cinnamon

Directions:
In bowl combine eggs, milk, rice, sugar, raisins, vanilla, and 1/2 tsp. salt; mix well. Bake in 10x6x2" baking dish at 325 for 25 minutes. Stir. Sprinkle with cinnamon. Continue baking till knife inserted halfway between center and edge comes out clean, 20 to 25 minutes longer. Serve warm or chilled with light cream, if desired.
