Salmon Fritters
Ingredients:
1 lg. can salmon, drained and flaked
1 c. buttermilk baking mix
1 egg
1/2 tsp. salt
1 tsp. dillweed
1 Tbs. lemon juice
2 Tbs. sliced green onions ( include tops)
2 Tbs. finely chopped green pepper

Directions:
Pour oil into a skillet or a large saucepan to a depth of 2 to 3". Heat to 365 degrees on deep-fat frying thermometer. Combine all ingredients in a large bowl. Drop by tablespoonsful, a few at a time, into hot fat. Fry, turning once, until golden brown, about 2 minutes. Drain. Makes about 24.
