Salmon Loaf
Ingredients:
1 egg, lightly beaten
1 c. cubed day-old bread (1/2" cubes), crusts removed
1 can 7 1/2 oz.) salmon, drained, bones and skin removed
2 Tbs. milk
1 Tbs. butter, melted
2 1/4 tsp. minced fresh parsley
1/2 tsp. lemon juice

Directions:
In a large bowl, combine all the ingredients. Press into a greased 5 3/4x 3x 2" loaf pan. Bake, uncovered, at 375 for 25-30 minutes or until lightly browned and set.
