Turkey Meat Loaf
Ingredients:
2 egg whites
1/3 c. ketchup
1 Tbs. Worcestershire sauce
1 tsp. dried basil
1/2 tsp. salt
1/2 tsp. pepper
1 small grated onion
1 small potato, finely grated
1 small sweet red pepper, finely chopped
2 lbs. lean ground turkey

Directions:
In a large bowl, whisk together the first 6 ingredients. Stir in onion, potato and red pepper. Crumble turkey over mixture and mix well. Shape into a 12x4" loaf in a foil-lined 13x9x2" baking pan. Bake, uncovered, at 350 for 70 minutes or until meat is no longer pink and a meat thermometer reads 165 degrees.
Makes 8 Servings
