Shrimp au Gratin
Ingredients:
3/4 lb. lg. shrimp
1 Tbs. lemon juice
2 Tbs. butter
3 Tbs. flour
1/2 c. water
1/2 c. half and half
White wine
1/2 tsp. lemon juice
Salt
1/4 c. dry bread crumbs
1/4 c. finely grated Parmeasan or Romano cheese

Directions:
Preheat oven to 400 degrees. Sprinkle shrimp with 1 Tbs. lemon juice; place in ramekin dishes or scallop shells. Melt 2 Tbs. butter in a small saucepan; stir in flour. Gradually add water, half and half and wine, stirring constantly. Cook 5 minutes. Season with 1/2 tsp. lemon juice and salt. Spoon or pour sauce over shrimp. In a small bowl, combine bread crumbs and cheese; sprinkle mixture over sauce-coated shrimp. Dot with butter. Bake 12 to 15 minutes or until topping forms a golden crust. Serve hot as an appetizer or snack.
