Spanish Rice
Ingredients:
1 Tbs. butter or vegetable oil
1 c. brown rice
5 green onions, chopped
1 medium tomato, chopped
1/4 c. chopped green pepper
2 c. chicken broth, defated
1/3 c. tomato juice
1/8 tsp. chili powder

Directions:
Heat butter in a large nonstick skillet. Add rice and cook for 5 to 8 minutes. Stir in remaining ingredients; cover and simmer for 45 minutes or until liquid is absorbed.
