Spinach Appetizers
Ingredients:
1 pkg. (10 oz.) frozen chopped spinach
1/2 c. fine bread crumbs
1 egg, slightly beaten
1/4 c. part-skim ricotta cheese
1/4 c. freshly grated Parmesan cheese
2 green onions, chopped
1/4 tsp. cumin
2 tsp. freshly squeezed lemon juice
1 pkg. (10 oz.) frozen chopped spinach
1/2 c. fine bread crumbs
1 egg, slightly beaten
1/4 c. part-skim ricotta cheese
1/4 c. freshly grated Parmesan cheese
2 green onions, chopped
1/4 tsp. cumin
2 tsp. freshly squeezed lemon juice
Directions:
Preheat oven to 400 degrees. Cook spinach according to package directions or until tender. Drain, and squeeze out excess water when cooled. Stir in remaining ingredients and form mixture into 1" balls. Place on nonstick baking sheet and bake for 12 minutes or until lightly browned.
