Squash Casserole
Ingredients:
1 1/2 lb. yellow summer squash, cooked and mashed
1 carrot, grated
1 sm. onion, chopped
3/4 c. sour cream
1 can cream of mushroom soup
1/2 c. bread crumbs
1/2 stick butter, melted

Directions:
Combine squash, carrot, onion, sour cream and soup; pour into casserole. Sprinkle with bread crumbs and pour over melted butter. Bake at 350 for 30-40 minutes.
