Stuffed Mushrooms


2 lbs. mushrooms
1/2 c. bread crumbs
1 beaten egg
1 Tbs. minced onion
salt and pepper
Beef or chicken broth
Parmesan cheese

Remove stems from mushrooms.Chop stems and saute slowly in margarine. Add about 1/2 c. bread crumbs, egg, dash of parsley, onion, salt and pepper. Fill caps with crumb mixture. Arrange in baking dish. Sprinkle with Parmesan cheese. Pour enough broth in pan to keep mushrooms from sticking. Bake at 375 about 20 minutes. Baste if necessary to keep moist.
