Stuffed Rolled Rib Roast
Ingredients:
4 oz. thinly sliced, fully cooked ham, chopped
3 slices bacon, snipped
1/4 c. chopped onion
2 Tbs. chopped pimiento-stuffed olives
1 clove garlic, minced
1 beaten egg
1 4-5 lb. boneless beef rib roast

Directions:
In bowl combine chopped ham, bacon, onion, olives, garlic, and beaten egg. Unroll roast; spread ham mixture over meat; tie securely.
Place roast; fat side up, on rack in shallow roasting pan. Roast, uncovered, at 325 degrees about 3 hours for rare. Let stand about 15 minutes. Remove strings and carve.
Makes 12-14 Servings
