Ingredients:
1 lb. sweet potatoes, peeled and thinly sliced
Cooking oil for deep frying
Salt to taste

Directions:
Soak potatoes in 2 qts. of ice water for 1 hour; drain and pat dry. Heat oil to 375. Fry potatoes, seven or eight slices at a time, until golden brown, 1-2 minutes, turning once. Drain on paper towels; sprinkle with salt. Cool.
