Zesty Carrots
Ingredients:
10 carrots
2 Tbs. chopped onion
2 Tbs. prepared horseradish
1/2 c. mayonnaise
1 tsp. salt
1/2 tsp. pepper
1/4 c. fine bread crumbs
1 Tbs melted butter
1 tsp. paprika

Directions:
Cut carrots in half lengthwise. Cook carrots with a small amount of water in saucepan until tender. Drain, reserving 1/4 c. liquid. Arrange carrots in shallow 7x11" baking dish. Combine reserved liquid, onion, horseradish, mayonnaise, salt and pepper in bowl; mix well. Pour over carrots. Sprinkle mixture of bread crumbs and butter over top. Sprinkle with paprika. Bake at 375 degrees for 15 minutes.
