Apple Date Squares
Ingredients:
2 apples, coarsely chopped
2/3 c water
1/2 c. pitted dated, coarsely chopped
1/2 c. sugar
1 1/2 c. flour
1/2 tsp. salt
3/4 c. dark brown sugar
1 1/2 c. quick oats, uncooked
1/2 c. coarsely chopped walnuts
3/4 c. melted butter
2 apples, coarsely chopped
2/3 c water
1/2 c. pitted dated, coarsely chopped
1/2 c. sugar
1 1/2 c. flour
1/2 tsp. salt
3/4 c. dark brown sugar
1 1/2 c. quick oats, uncooked
1/2 c. coarsely chopped walnuts
3/4 c. melted butter
Directions:
In medium saucepan combine apples, water, dates and sugar. Bring to a boil, stirring occasionally. Continue cooking, stirring occasionally, 10-12 minutes, until thickened. Cool.
Preheat oven to 350 degrees. Line a 9" square pan with foil or wax paper; lightly grease. In medium bowl combine flour, salt sugar, oats and nuts. Add melted butter and stir until completely mixed. Reserve 1 c. crumbs. Press remaining crumbs onto bottom of prepared pan, forming a smoothy layer. Cover crust with apple mixture. Sprinkle reserved crumbs on top. Bake 45 minutes. Cool in pan. Invert onto cookie sheet. Remove foil and invert again. Referigerate for easy cutting. Makes 16 squares.
