Baked Potato Soup
Ingredients:
1 lb. baking potatoes, baked and chopped with skins on
1 c. chicken stock
1/4 c. butter
1/4 c. flour
1/2 c. sour cream
1/2 c. half and half
Salt and pepper to taste
Scallion or chives, chopped, for garnish

Directions:
In a 3 quart soup pot add potatoes, chicken stock and 3 c. water. Bring to a simmer while uncovered. In a small saucepan, melt the butter and add the flour, whisking to form a paste. Whisk the flour into the soup until no lumps remain. Add sour cream and half and half. Bring to a simmer and add salt and pepper to taste. Ladle into soup bowls and garnish with scallions or chives.
