Crab Meat-Cheese Casserole
Ingredients:
10 Tbs. butter, melted
2 Tbs. flour
2 c. cream, scalded
1/4 c. grated Swiss cheese
1/4 c. grated Parmesan cheese
Salt
Cayenne pepper
3 c. crab meat, flaked

Directions:
Make white sauce of 2 Tbs. butter, flour and cream. Add cheese; stir until melted. Add remaining butter, beating hard. Season with salt and cayenne. Arrange crab meat in shallow buttered casserole. Pour sauce over crab meat. Place under a moderately hot broiler for 8-10 minutes until a golden brown.
Makes 6-8 Servings
