Medium White Sauce
Ingredients:
2 Tbs. butter
2 Tbs. flour
1 c. milk
1/4 tsp. salt
Dash of white pepper

Directions:
Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper. Serve over poached eggs, poultry, seafood, or vegetables. Makes 1 cup.
CHEDDAR CHEESE SAUCE: Stir in 1 c. shredded Cheddar cheese and 1/4 tsp. dry mustard with salt and pepper. PARSLEY SAUCE: Stir in 1/4 c. chopped parsley with salt. HORSERADISH SAUCE: Stir in 1 1/2 to 2 Tbs. prepared horseradish with salt and pepper.
