Potato Casserole
Ingredients:
6-8 peeled potatoes
1 chopped onion
Butter
3/4 c. milk
2 sliced cubed bread
1/4 c. butter
1 Tbs. flour
1 egg
2 Tbs.chopped parsley
Salt and pepper to taste

Directions:
Boil 6-8 peeled potatoes in salt water until tender. Saute onion in butter until soft. Drain potatoes and mash, using 3/4 c. milk. Add sauteed onion, 2 sliced cubed bread, 1/4 c. butter, 1 Tbs flour, 1 egg and 2 Tbs. parsley. Season to taste with salt and pepper. Add another cup milk and whip mixture thoroughly. Place in buttered casserole and bake at 350 for 1 hour.
Makes 8-10 Servings
