Potato Soup
Ingredients:
4 c. diced potatoes
1 medium onion
3 Tbs. flour
1 Tbs. butter
1 qt. milk
1 egg, beaten
salt & pepper
Parsley

Directions:
Boil potatoes and onion in a small amount of water until soft. Add milk, salt and pepper then reheat.Brown flour in the butter and blend in slowly into the potato mixture. Add a little water to the beaten egg and stir into the soup. Let it cook for a few minutes and serve with a sprinkling of chopped parsley.
