Puree of Turnip Soup
Ingredients:
2 c. sliced young turnips
2 medium sliced turnips
1 small sliced onion
3 Tbs. butter
1 1/2 Tbs. flour
3c. chicken stock
1 c. milk
1 Tbs. chopped parsley

Directions:
Melt the butter and cook the turnips, potatoes, and onion gently until tender, about 20-30 minutes. Sprinkle in a little flour and blend thoroughly. Pour on the stock and mix well before bringing to a boil. Reduce heat and simmer for 15 minutes. Put the soup into a blender and blend until smooth. Reheat, adding more seasoning, if necessary, and the milk. Sprinkle with parsley on top and serve.
