Rhubarb Crumb Pie
Ingredients:
Pastry for 1 pie crust.
5 1/2 c. fresh rhubarb, cut into pieces
1 1/4 c. sugar
1 Tbs. brown sugar
1 Tbs. flour
3 Tbs. cornstarch
Dash of salt
Pinch of cinnamon
1 drop of vanilla extract
Crumb Topping:
1/2 c. sugar
3/4 c. flour
1/3 c. butter
Pastry for 1 pie crust.
5 1/2 c. fresh rhubarb, cut into pieces
1 1/4 c. sugar
1 Tbs. brown sugar
1 Tbs. flour
3 Tbs. cornstarch
Dash of salt
Pinch of cinnamon
1 drop of vanilla extract
Crumb Topping:
1/2 c. sugar
3/4 c. flour
1/3 c. butter
Directions:
To make pie: Preheat oven to 450 degrees. Toss rhubarb with sugar, brown sugar, flour, cornstarch,salt, cinnamon and vanilla. Fill prepared pie shell. Bake at 450 for 10 minutes, then lower temperature to 375 and continue baking for 20 minutes. Remove from oven. Sprinkle crumb topping evenly over top of pie and return to oven. Bake until golden brown, about 30-35 minutes.
To make crumb topping: Mix all ingredients together until mixture becomes crumbly.
Makes 6-8 Servings
