Roasted Parsnip
Ingredients:
2 c. sliced parsnip
1 c. peanut oil
1 garlic clove, chopped
2 tsp. celery seeds
Salt and pepper

Directions:
In a saucepan filled with lightly-salted boiling water blanche sliced parsnip 1 minute or so. Drain. Dry with paper towel. In a heavy-bottomed casserole dish, heat oil. Add garlic. In two steps, fry sliced parsnip until golden brown. Remove. Shake off excess oil. Transfer to a serving dish. Sprinkle with celery seeds. Season with salt and pepper.
