Sweet Potato Biscuits
Ingredients:
1 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
Pinch of ground nutmeg
1/2 c. cooked, mashed sweet potatoes
1/3 c. milk
3 Tbs. vegetable oil
1 c. flour

1/2 c. cooked, mashed sweet potatoes
1/3 c. milk
3 Tbs. vegetable oil
Directions:
Combine the flour, baking powder, salt and ground nutmeg, stirring well; set mixture aside. Combine remaining ingredients; pour over flour mixture, and stir until dry ingredients are moistened. (Dough will be soft.)
Turn dough out onto a heavily floured surface, and knead 4 or 5 times, adding more flour as needed.
Roll dough to 1/2" thickness; cut with a 2" biscuit cutter. Place on a lightly greased baking sheet. Bake at 425 for 15 minutes or until lightly browned. Makes 10 biscuits.
