Turkey Croquettes
Ingredients:
2 c. ground cooked turkey
1 can cream of chicken soup
1 Tbs. chopped parsley
1 onion, finely chopped
1 tsp. lemon juice
1 1/2 c. cooked rice
1 egg
2 Tbs. milk
1 c. bread crumbs
4 c. oil for frying

Directions:
In a bowl mix first 6 ingredients. Refrigerate 1 hour. In a medium-size bowl beat together egg and milk. Set aside. Sprinkle bread crumbs onto a plate. Set aside. Remove turkey mixture from refrigerator. Shape into 12 patties. Dredge with bread crumbs. Dip into milk mixture. Dredge with bread crumbs once more. In a deep fryer, heat oil to 400 degrees. Fry patties to a nice golden brown color.
