Apple Raisin Cookies
Ingredients:
1 c. sugar
1 c. unsweetened applesauce
1/2 c. shortening
1 egg
2 c. flour
1 c. quick-cooking oats
1 tsp. baking soda
1 tsp. apple pie spice
1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. raisins
1/2 c. chopped nuts
1 c. sugar
1 c. unsweetened applesauce
1/2 c. shortening
1 egg
2 c. flour
1 c. quick-cooking oats
1 tsp. baking soda
1 tsp. apple pie spice
1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. raisins
1/2 c. chopped nuts
Directions:
Heat oven to 375 degrees. In large mixing bowl, combine sugar, applesauce, shortening and egg. Beat until well blended. Add flour, oats, baking soda, apple pie spice, baking powder and salt. Beat at low speed until soft dough forms. Stir in rasins and pecans. Drop dough by heaping teaspoonfuls 2" apart onto ungreased cookie sheets. Bake for 11-15 minutes, or until light golden brown.
