Carrot Casserole

Ingredients:

6 lg. carrots
2 eggs, separated
1 med. onion, diced
1 c. bread crumbs
2 Tbs. butter
1 c. milk
Salt and pepper to taste

Directions:

Cook carrots; drain and mash. add all ingredients, folding in beaten egg whites last. Put into a buttered casserole. Bake at 350 for 1 hour.
