Cheese Muffins
Ingredients:
3 3/4 c.biscuit mix
2 c. shredded sharp Cheddar cheese
2 Tbs. poppy seeds
1/8 tsp. red pepper
1 egg, beaten
1 1/2 c. milk

Directions:
Combine first 4 ingredients in a large bowl; Make a well in center of mixture. Combine egg and milk; add mixture to dry ingredients, stirring just until moistened. Spoon into greased miniature muffin pans. Bake at 350 for 20 to 25 minutes. Remove from pans immediately, and let cool slightly on wire racks Makes 4 1/2 dozen.
