Chewy Date Drops
Ingredients:
2 c. chopped dates
1/2 c. sugar
1/2 c. water
1 c. brown sugar
1/2 c. sugar
1 c. butter, softened
1 tsp. vanilla
3 eggs
4 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. chopped pecans

Directions:
In medium saucepan, combine dates, 1/2 c. sugar and water. Cook over medium heat until thickened, stirring occasionally. Cool.
In large bowl, beat brown sugar, 1/2 c. sugar and butter until light and fluffy. Add vanilla and eggs; blend well. Stir in flour, baking soda and salt; mix well. Stir in dates and nuts. Drop dough by rounded teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 375 for 8 to 10 minutes or until lightly brown. Immediately remove from cookie sheets. Makes 6 doz. cookies.
