Cider Stew
Ingredients:
3 Tbs. flour
1/4 tsp. dried thyme, crushed
2 lbs. stew meat
3 Tbs. cooking oil
2 c. apple juice or cider
1/2 c. water
2 Tbs. vinegar
4 carrots, quartered
3 potatoes, peeled and quartered
2 onions, sliced
1 stalk celery, sliced
1 apple, chopped

1/2 c. water
2 Tbs. vinegar

Directions:
In paper or plastic bag combine flour, thyme, 2 tsp. salt, and 1/4 tsp. pepper. Add meat, 1/4 at a time; toss to coat. In Dutch oven brown meat in hot oil. Stir in apple juice, water, and vinegar; cook and stir to boiling. Reduce heat; simmer, covered, till meat is tender, 1 to 1 1/2 hours. Add vegetables and apple. Cook till vegetables are tender, about 30 minutes.
Makes 6-8 Servings
