Indian Corn Stew
Ingredients:
2 Tbs. butter
1 lb. beef, ground
1 onion, chopped fine
1 clove garlic, chopped fine
1 green pepper, coarsely chopped
3 c. fresh or frozen corn
3 ripe tomatoes, skinned and coarsely chopped
(I use 1 can chopped tomatoes)
1 Tbs. Worchestershire sauce
2 tsp. sugar
1 1/2 tsp. salt
2 Tbs. butter
1 lb. beef, ground

Directions:
Melt butter in a large skillet. Add beef and saute over a high heat until brown. Stir in onion, garlic green pepper and cook about 5 minutes. Add corn, tomatoes and seasonings. Cover and simmer for about 30 minutes. (This is so colorful and freezes well so it can be enjoyed all winter.
Makes 4-6 Servings
