Crab Cakes
Ingredients:
1 lb. fresh lump crabmeat, drained
1 c. mashed potatoes
1 med. onion, finely chopped
2 eggs, beaten
2 Tbs. prepared mustard
1/4 tsp. ground red pepper
Vegetable oil

Directions:
Combine first 6 ingredients in a large bowl; stir well. Shape mixture into 12 patties. Pour oil to depth of 2" into a Dutch oven; heat to 375 degrees. Fry patties 2 to 3 minutes or until golden. Drain well.
