Crab Imperial
Ingredients:
2 c. milk
4 Tbs. butter
4 Tbs. flour
Salt and pepper to taste
Few drops Tabasco sauce
1 tsp. Worcestershire sauce
1 tsp. celery salt
2 hard-cooked eggs, cut fine
1 lb. backfin crab meat
Parsley, chopped
8 slices white American cheese
2 c. milk
4 Tbs. butter
4 Tbs. flour
Salt and pepper to taste
Few drops Tabasco sauce
1 tsp. Worcestershire sauce
1 tsp. celery salt
2 hard-cooked eggs, cut fine
1 lb. backfin crab meat
Parsley, chopped
8 slices white American cheese
Directions:
White sauce: In a saucepan, melt butter, then add flour (mix well), then stir in milk. Cook until thickened. Add the white sauce, salt , pepper, Worcestershirte and Tabasco sauces and celery salt. After checking crab meat for pieces of shell, place in mixing bowl and mix in white sauce.Then add eggs and parsley. Put in 8 shells and top each with a slice of cheese. Bake about 30 minutes, until cheese is a pretty golden color, in a 325 degree oven. Pan size 8 seafood shells.
