Crab Patties
Ingredients:
1 lb. back fin crab meat
1 tsp. salt
1/2 tsp. pepper
1 tsp. prepared mustard
4 regular saltines crushed fine
1 beaten egg
2 Tbs. melted butter
1 Tbs. mayonnaise

Directions:
Mix beaten egg, mayonnaise and mustard together. Pick over crab meat for shells, add salt and pepper and melted butter. Mix the crushed saltines into crab meat carefully.Add the egg mixture carefully and shape into cakes, about 3 tablespoons full to each cake. Fry in butter to desired browness. Should make 8 or 9 cakes.
