Fried Tomatoes
Ingredients:
4 medium tomatoes
1/2 c. flour
1/2 tsp. salt
3 Tbs. fat
1/8 tsp. pepper
2 Tbs. brown sugar
1 c. cream

2 Tbs. brown sugar

Directions:
Use ripe but firm tomatoes.
Do not remove skins.
Cut in slices 1/3" thick.
Roll in flour and fry in hot fat.
When browned on both sides, sprinkle with salt, pepper and brown sugar.
Place tomatoes on platter.
Add 1 Tbs. flour to fryings; when well blended add the cream.
Allow gravy to thicken and then pour it over the fried tomatoes.
Makes 5 Servings
