Stuffed Acorn Squash
Ingredients:
1 c. shredded zucchini
1/2 c. crushed saltine crackers
1/3 c. ketchup
1 egg
1 1/2 tsp. dried minced onion
1/2 tsp. garlic salt
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper
3/4 lb. ground beef
2 large acorn squash
1 c. shredded zucchini
1/2 c. crushed saltine crackers
1/3 c. ketchup

1/2 tsp. garlic salt
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper
3/4 lb. ground beef
2 large acorn squash
Directions:
In a medium bowl, combine the first 9 ingredients. Add beef; mix well. Cut squash in half; remove and discard the seeds. Fill with meat mixture. Place in a greased 13x9x2" baking dish. Cover and bake at 400 for 1 hour or until squash is tender. Uncover and bake for 10 minutes more.
