Kohlrabi Soup
Ingredients:
5 c. meat broth
1 lb. kohlrabi, peeled and diced
2 Tbs. water
1 Tbs. cornstarch
1 tsp. salt
1/4 tsp. pepper
1 Tbs. butter, melted
2 egg yolks

Directions:
Boil broth and kohlrabi in large saucepan. Cover; reduce heat and simmer 20 to 30 minutes, until kohlrabi is tender. Mash or puree the kohlrabi. Make a smooth past by stirring water into cornstarch. Add to soup. Season with salt and pepper. Cook soup over medium heat until it boils. Beat melted butter into egg yolks. Then beat in a little of the hot soup. Remove soup from heat. Beat in egg yolk mixture. Serve hot with croutons.
