Parsnips Puree

Ingredients:

2 lbs. parsnips, cut in 1" pieces
8 oz. plain yogurt
Dash of ground white pepper
Dash of ground nutmeg
Salt to taste

Directions:

Cook parsnips in a small amount of boiling water 10 minutes or until tender. Drain well. Position knife blade in food processor bowl; add parsnips. Cover and process 1 minute or until smooth, stopping once to scrape down sides. Add yogurt; cover and process 20 to 30 seconds or until blended, stopping once to scrape down sides. Stir in pepper, nutmeg and salt to taste. Serve immediately.
