Potato Cabbage Casserole
Ingredients:
6 lg. potatoes, peeled, boiled
4 tsp. butter
2/3 skim milk 2 1/2 c. green cabbage, minced, blanched
2 tsp. fresh parsley
Salt and pepper
1 Tbs. vegetable oil
1 c. onion, finely chopped
1 c. aged Cheddar cheese, grated
6 lg. potatoes, peeled, boiled
4 tsp. butter
2/3 skim milk 2 1/2 c. green cabbage, minced, blanched
2 tsp. fresh parsley
Salt and pepper
1 Tbs. vegetable oil
1 c. onion, finely chopped
1 c. aged Cheddar cheese, grated
Directions:
Preheat oven to 350 degrees. In a blender or bowl mash potatoes, butter and milk until smooth. Fold in cabbage, parsley, salt and pepper. Set aside, In a frying pan, heat oil. Cook onion until tender but not browned. Add to potato mixture. In a greased 10 c. baking dish, spread a layer of mashed potatoes. Cover with half the cheese. Spread a second layer of mashed potatoes, then remaining cheese. Cook 30-40 minutes or until cheese turns a nice golden brown color. Serve.
