Potato Pancakes
Ingredients:
4 med. raw potatoes, grated
1 c. cooked mashed potatoes
1 egg
1 egg yolk
1 tsp. salt
1/2 tsp. pepper
Fat or butter for frying

Directions:
Press the liquid from the grated potatoes and discard. Combine the grated potatoes with the mashed potatoes, egg, egg yolk , salt and pepper. Shape into desired size pancakes and fry until brown and crisp on both sides.
