Potato Soup
Ingredients:
4 c. chopped potatoes
1/2 c. chopped celery
1/4 c. chopped onion
1/4 c. chopped parsley
1/2 tsp. celery salt
1/8 tsp. pepper
4 c. water
2 c. half & half
4 hard-boiled eggs, sliced
3 Tbs. butter

Directions:
Combine potatoes, celery, onion, parsley, celery salt, salt, pepper and water in a sauce pan. Cook until vegetables are crisp-tender. Add cream and eggs. Heat just to simmering point; do not boil. Stir in butter. Garnish serving with additional parsley.
