Potato Skins
Ingredients:
8 medium-sized potatoes
1/4 c. flour
Cooking oil
Seasoned salt

Directions:
Scrub the potatoes and pierce with a fork. Rub lightly with oil and bake at 400 for about 50 to 60 minutes, or until tender. Cool. Cut the potatoes in half lengthwise and scoop out most of the white part, leaving about 1/4" shell. Cut the shells in half lengthwise, then in half cross-wise, which will give you 8 pieces for each potato. Dip in flour and shake off excess, then deep fry in oil at 375 degrees for about 2 minutes or until lightly browned. Drain on paper towels. Sprinkle with seasoned salt and serve. These may be made ahead of time and reheated by placing on baking tray in 375 degree oven for about 10 minutes.
