Raw Mushroom Salad
Ingredients:
1 lb. button mushrooms
Juice of 1 lemon
8 Tbs. olive oil
Salt and freshly ground black pepper
1 tsp. finely chopped chives
1 tsp. finely chopped parsley
1 lb. button mushrooms

1 tsp. finely chopped parsley
Directions:
Remove the stems from the mushrooms, wash and dry the caps, and cut into slices. Arrange in a shallow salad bowl. Blend the lemon juice and oil, add salt and pepper to taste, and pour over mushrooms. Toss carefully and set aside to chill for at least 1/2 hour. Before serving sprinkle with the chives and pasley.
Makes 5-6 Servings
