Red Velvet Whoopie Pies
Ingredients:
1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 oz. red food coloring
2 Tbs. cocoa
1 1/2 tsp. baking soda
3 1/2 c. flour
1 tsp. vanilla
1 c. buttermilk
1 Tbs. vinegar
1/2 c. shortening

1 Tbs. vinegar
Directions:
Make paste of cocoa and food coloring and set aside. Cream shortening, sugar and eggs. Add cocoa mix and vanilla. Beat at medium speed. Add flour. Add buttermilk gradually and beat on medium speed of mixer. Then add soda and vinegar. Drop by Tbs. on greased cookie sheet. Bake at 350 degrees for 12-15 minutes or until done. Let cool.
FILLING:
2 tsp. vanilla
4 Tbs. flour
2 Tbs. milk
1 1/2 c. Crisco
2 egg whites
1 box 10x sugar
Combine all ingredients and mix well. Spread between two cakes.
