Rock Lobster Divan
Ingredients:
12 (3/4 oz.) rock lobster tails
4 pkgs. frozen broccoli
1 stick butter
6 Tbs. flour
3 c. milk
1/2 c. grated cheddar cheese
Seasonings to taste
Lemon slices
12 (3/4 oz.) rock lobster tails

Directions:
Drop frozen rock lobster tails into boiling salted water. When water reboils, cook for 7 minutes; drain immediately and drench with cold water. Cut along each edge of thin membrane underside with kitchen scissors and strip off. Remove meat from shell and keep hot. Cook broccoli according to directions and drain. Melt butter, stir in flour and add milk gradually. Add cheese and cook, stirring until cheese is melted and sauce thick. Season to taste. Line 6 individual casseroles with broccoli and place 2 hot lobster tails on top. Pour cheese sauce over this and heat under broiler until brown and bubbly. Serve immediately with lemon slices.
