Salmon Fritters
Ingredients:
1 can (7 3/4 oz.) salmon
Milk
1 c. buttermilk baking mix
1 egg, slightly beaten
1 tsp. lemon juice
1/4 c. finely chopped celery
2 Tbs. each finely chopped green pepper and onion
1/2 tsp. seasoned salt
Oil

Directions:
Drain salmon, reserving liquid; flake. Add milk to salmon liquid to make 1/2 c. Add to baking mix with egg and lemon juice. Blend in salmon, vegetables and seasoned salt. Drop batter by spoonfuls into deep oil heated to 375 degrees. Fry about 3 minutes or until golden brown on both sides. Drain on paper towels.
